Since my family is out of town, and I'm not getting to see my man friend this weekend, I decided to make myself a decidedly un-4th of July-like salad: Red leaf lettuce covering the plate making almost a bowl Thinly sliced red onion Small chunks of fresh mango Chunks of avocado Chunks of "Lobster" surimi Sprinkled with very finely diced jalapeno Citrus dressing: Juice and zest of 1/2 lime, lemon, orange 2 TB white wine vinegar Salt & fresh cracked pepper 1 crushed clove of garlic - remove from dressing before serving 1/3 cup vegetable oil 1/2 tsp. dijon mustard 1 handful cilantro finely minced Whisk it all together then let sit in fridge for about 1 hour to let flavors develop then lightly drizzle the salad Topped with wonton skins sliced into ribbons, fried in vegetable oil & sprinkled with fine sea salt. Oven fried zuchinni: Slice zuchinni lengthwise into planks, dip in flour, then egg & milk mixed together, then flour once again. Put on lightly oiled baking sheet, bake at 400 degrees until crispy

Happy to provide the entertainment -- I love to cook for other people - not too inspiring just cooking for myself [except for when conducting experiments] -- probably because I'm a hog for positive reinforcement -- plus I know a good meal makes other people feel good ..... It [cooking] makes me feel good because it is something I am really good at [in my opinion, and that I take pride in] that also pleases others! It is a wonderful and self-reinforcing hobby.
